Fig and Almond Energy Bites

These energy bites are perfect for your post work out snack or to give you a little pick-me-up during a long work day!

Snack, Sweet Treat, Vegetarian

Ingredients

  • 15 dried Mission figs
  • 7 pitted Mejool dates
  • 1/4 cup natural almond butter
  • 3/4 cup oats, either old fashioned or quick cooking
  • 1/4 cup ground flaxseed meal
  • 1 teaspoon pure vanilla extract

Directions

1.) Add all ingredients to a food processor. Blend and pulse for 2-3 minutes, until the mixture begins to clump and sticks to the sides of the bowl, stopping to scrape down the bowl as needed.
2.) Wet hands and roll the mixture into 12 balls. Store in an airtight container in the refrigerator for up to two weeks or freezer for long term.
