Breakfast Scramble

This breakfast scramble is packed with important vitamins and will give you an added boost to start your day.

Breakfast, Vegetarian

Yields 1 MetPro Serving

Fat = 1 (Basic: 15g fat)


Ingredients

  • 3 eggs
  • 2 handfuls of shiitake mushrooms
  • 1 handful of kale
  • ½ tsp minced garlic
  • Pinch of crushed red pepper
  • salt and black pepper to taste
  • Any free foods for toppings- tomatoes

Directions

1.) Heat a nonstick pan over medium and spray with a nonstick olive oil spray. Add mushrooms to the pan and saute until they begin to soften and brown, about 2 minutes.
2.) Add kale and saute for another 1-2 minutes. Scramble eggs in a seperate bowl and pour into pan along with garlic and seasonings. Serve when eggs are cooked through and top with your favorite free foods.
