Meal Prep Mini Meat Loafs

A Bite Sized Meatloaf Snack. Fantastic for Lunch or Dinner!

Yields 4 MetPro Servings Total
Serving Size: 1 loaf

Protein = 2 (Basic: 30g protein)
Meal Carbs = 1 (Basic: 15g meal carbs)
Veggie Carbs = 1.5 (Basic: 7.5 veggie carbs)

Ingredients

  • 1 lb lean ground beef
  • 3 oz diced onions
  • 1 large egg
  • 1/4 cup oat flour
  • 1/2 cup tomato sauce (save a little for topping the meatloaves)
  • 1 tbsp Italian seasoning
  • 1/8 tsp paprika
  • Salt & pepper

Directions

1.) Preheat oven to 425 degrees. Combine all meatloaf ingredients well. Shape into 4 mini loafs. Place on a baking sheet. Top with leftover tomato sauce.
2. Bake for 45 minutes or until internal temp reaches 160.
3. Place 4 loafs in individual containers. Add veggies and/or carbs of your choice to the container for a full meal.
4. Put in your refrigerator. Enjoy all week for lunch or dinner!
