Tofu Spinach Breakfast Scramble

Ingredients
- 5oz firm tofu
- 1 cup spinach, chopped
- ¼ cup tomato, diced
- ½ Tsp turmeric
- 1 Tbsp nutritional yeast
- ⅛ Tsp salt
- ¼ avocado
Directions
1.) Wrap tofu in paper towels and lightly press to release excess water. In a small bowl, mash tofu until it resembles a “scramble”. This can be done with a potato masher or fork.
2.) Using a non-stick spray, saute tofu in a medium pan for 4-5 minutes. Mix in turmeric powder, nutritional yeast, and salt. Add spinach and cook another 1-2 minutes or until spinach has wilted. Top with diced tomatoes, avocado and a sprinkle of salt and pepper.
MetPro Tip: This makes for a great burrito or as breakfast tacos! If you can have the meal carbs, wrap it up in a MetPro approved whole wheat tortilla (1 meal carb) or two corn tortillas (1 meal carb).
