Vegetarian Rice Bowl

This rice bowl includes sweet potato--a common food in many MetPro meals!

Veggie Carbs = 1.5 (Basic: 7.5 veggie carbs)

Ingredients

  • 3 oz sweet potato
  • 2 egg whites, scrambled
  • 1/3 cup brown rice
  • 4.5 oz broccoli
  • 1 tbsp olive oil
  • ¼ tsp garlic powder
  • ⅓ cup cilantro
  • ½ a lime

Directions

1.) Preheat oven to 375 degrees. Dice sweet potatoes and spread evenly along a baking sheet, bake for 20 min.
2.) Start cooking brown rice. While rice is cooking, scramble egg whites in pan. Add garlic powder and broccoli to pan and saute with egg whites.
3.) Once broccoli is browned, add rice and sweet potatoes. Stir in cilantro and squeeze juice from lime over bowl. Enjoy!
