Tortilla Soup

Loaded with spices, vegetables and slow-cooked beef, this tortilla soup will soon become a family favorite!

Ingredients:

  • 2 pounds grass-fed stew beef
  • 1/2 red onion diced
  • 2 cups crushed tomatoes
  • 8 oz diced green chilies, mild
  • 1 jalapeno, seeded and diced
  • 4 cloves of garlic, minced
  • 2 cups beef broth
  • 1/8 cup Lime juice
  • 2 teaspoons Chili powder
  • 2 teaspoons Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Thyme
  • 1/2 teaspoon Coriander
  • dash of cayenne pepper (add more for additional heat)
  • Sea Salt + Pepper to taste
  • Top with chopped cilantro

Need more protein or a meal carb? Add corn tortilla strips, brown rice, or cheese to your serving!

Directions:

Place the beef in the bottom of a slow cooker. Add all of your spices on top of your beef and mix together until well coated. Add all remaining ingredients – onion, tomatoes, green chilis, jalapeno, garlic, and beef broth. Cover and cook on low for 8-10 hours.
