MetPro Serving Breakdown:

Fat = .5 (Basic: 7.5g fat)
- 2 heads of cauliflower
- 2 large zucchini, cubed
- 2 tbsp olive oil
- 2 Jalapenos, seeds removed & chopped
- 6 Green Onions, finely chopped
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & pepper to taste
1.) Preheat oven to 400 degrees F. Trim the cauliflower by removing stalks and leaves and cut into florets. By using either a grater or a food processor, make the cauliflower into rice.
2.) Spread the cauliflower rice in an even layer onto a pre-sprayed baking sheet. Bake for 15 minutes, turning over halfway through.
3.) While the cauliflower is baking, heat a pan with the 2 tbs olive oil. Add the zucchini and cook until slightly golden brown and then toss in the jalapenos and green onion, cooking for about 5 minutes. Add in all of the spices covering thoroughly and set aside.
4.) When the cauliflower rice is cooked, add it to the zucchini mixture and stir until completely combined. Serve warm and enjoy!
