Ingredients
- 2/3 cup 2% milk fat small curd cottage cheese
- 2 large eggs, separated
- 1 tsp vanilla extract
- 1 tbsp sugar (optional)
- 1 cup oat flour, or grind old-fashioned rolled oats in a blender
- 1/2 tsp baking powder
- 1/4 tsp kosher salt
Directions
1.) Heat a waffle iron on its medium setting.
2.) Beat the egg white to soft peaks.
3.) In a separate bowl, place cottage cheese, egg yolks, vanilla, sugar, oat flour, baking powder, and salt and beat until the mixture is a smooth batter. Gently fold egg whites into the batter.
4.) Spray preheated waffle iron with oil spray. Pour batter into iron (about 1/4 cup) and cook until golden brown and steam is no longer being released.
