Ground Turkey & Sweet Potato “Nachos”

Ingredients

  • 1lb (16oz) lean ground turkey
  • 3 large sweet potatoes
  • 1 medium yellow onion, diced
  • 1 green chili, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp ground cumin
  • 1 Tbs tomato paste
  • 12 oz can diced tomatoes
  • Salt & pepper

Optional Toppings:

  • 2 medium tomatoes, diced
  • 2 Tbs fresh cilantro, chopped
  • 1-2 Tbs lime juice
  • 2 Tbs green onions, chopped
  • 2 medium avocados (adds .5 Fat for each serving)

Directions

1.) Preheat the oven to 375. Peel the sweet potatoes and slice thinly. Place them in a single layer on a lined baking sheet (sprayed with non-stick cooking spray). Bake for 10 minutes, flip, and bake another 10 minutes.
2.) While the potato chips are baking, cook the meat. Spray a pan with non-stick cooking spray, add the onion and saute 3-4 min until softened. Add the turkey and cook 4-5 min until golden brown. Add in the garlic, diced tomatoes, tomato paste, and remaining spices, stir well to combine.
3.) Bring the mixture to a simmer and then turn the heat down to medium-low. Cook, covered for 20-25 minutes, stirring regularly.
4.) Stir the chopped tomatoes, lime juice, and cilantro into the turkey mixture. Add salt & pepper to taste. Remove from the heat.
5.) To assemble the “nachos” form a large circle with the sweet potato chips on a platter (or large plate). Add the ground turkey mixture into the middle, and top with optional toppings.
