Roasted Winter Veggies

Ingredients

  • 2 cups parsnips, sliced
  • 2 cups delicata, sliced
  • 4 carrots, sliced
  • 2 green bell peppers, chopped into small chunks
  • 1 ½ Tbsp oil (avocado or olive)

Directions

1.) Preheat oven to 375. Toss veggies in oil and season with sea salt. Spread onto a cookie sheet and bake for 25-35 minutes or until veggies are tender and starting to brown.

*TIP: give your veggies some space. Use two cookie sheets if needed so the veggies aren’t crowded on one sheet. Too much crowding can make veggies soggy or bake unevenly.
