Greek Inspired Chicken Salad

Ingredients
- 2 boneless skinless chicken breasts (16 oz)
- 1 tsp. ground coriander
- 1 tsp. dried oregano
- 1 tbsp. freshly chopped parsley
- 4 romaine hearts, chopped
- 3 Persian cucumbers, thinly sliced
- 10 oz grape or cherry tomatoes, halved
- 1 avocados, sliced (¼ avocado per serving)
- 4 oz. feta, crumbled (1 oz cheese per serving)
Directions
1.) Heat grill to medium-high. Season chicken with coriander, oregano, salt, and pepper. Grill, covered, turning halfway through, until golden and no longer pink. Let rest and then slice.
2.) Divide lettuce, cucumbers, tomatoes, avocado, and feta among four serving bowls. Top with sliced chicken.
3.) Drizzle the salad with your favorite low calorie Greek dressing (under 40 cal/serving or less)
